Prosciutto/Mozzarella/Arugula/Roasted Red Pepper Panino.

Ah yes, another sandwich post. As stated before, I am a huge lover of the sandwich. THINGS. THINGS BETWEEN BREAD. PRESSED THINGS BETWEEN BREAD. MELTY CHEESE. IN YOUR FACE.

Also, because it is a huge pet peeve of mine, let me make this clear: Pane is the Italian word for ‘bread’, panino the word for ‘sandwich’, and panini the plural form of panino.

Prosciutto/Mozzarella/Arugula/Roasted Red Pepper Panino

3 slices Prosciutto di Parma
2 thick slices mozzarella di bufalo
1 handful arugula
1 roasted red pepper, thinly sliced
2 slices thick crusty bread
salt & pepper
Extra-Virgin olive oil

On one slice of bread, layer prosciutto, mozzarella, and red peppers. Top with arugula and remaining slice of bread. In a skillet over a low flame, heat 2-3 tablespoons of olive oil. Add sandwich, cover with lid, and cook for 5-6 minutes or until first side gets golden brown. Flip while adding more olive oil to the pan, and cook for another five minutes. Once cooled, cut and serve.
