When It Comes To Leftover Turkey.

Over the holidays, I brined two turkey breasts.

It was glorious.

But then I had a shitload of leftover turkey. Sure, we ate leftovers, and made the occasional turkey/mashed potato/gravy sandwich, but that can grow tiresome over the course of a week.

So, being the Irish woman I am, I decided to mix all of my leftovers together and make myself a shepherd’s pie of leftovers.

But individually.

And it was a f**king delight.

Shepherd’s Pie of Leftovers
Serves Whoever Wants This

1 cup cooked turkey breast, cubed
1/2 yellow onion, minced
2 cloves garlic, minced
1 large carrot, diced
1 cup French green beans, diced
1 cup frozen spring peas
1 cup gravy
1 cup mashed potatoes
extra-virgin olive oil
salt and pepper

1. Preheat oven to 350˚F.
2. Make base: Saute onion seasoned with salt in medium saucepan over medium-low heat for 10 minutes. Add carrot and garlic, continue to saute for 10 minutes more. Add green beans and saute 5 minutes. Add gravy, season with salt and pepper.
3. Assemble pie: In individual casserole dish or French onion soup bowl, add base. Cover with mashed potatoes. Bake for 20 minutes until golden. Serve. Just don’t burn the crap out of your tongue.
