Upgraded Grilled Cheese.

I deemed #SandwichSunday a “thing.”

And yet, I’ve not posted a Sandwich on Sunday in many moons.

That does not a good blogger make.

So let’s get right to it.

Sandwiches, commence!

Upgraded Grilled Cheese
Makes 1 Sandwich

2 pieces soft white bread
1 Tbsp. whole-grain mustard
2 slices deli ham
2 slices kosher dill pickles
¼ cup Parmigiano-Reggiano cheese, grated
1 large slice Emmenthaler cheese
1 Tbsp. extra-virgin olive oil
1 Tbsp. butter

1. Lay out bread slices on work surface; spread mustard on one slice; top with deli ham, pickles, Parmigiano-Reggiano, and Emmenthaler; close sandwich.
2. Preheat medium sauté pan to medium-low heat; add olive oil and butter; when melted, add sandwich; cover with lid; cook 5 to 6 minutes or until golden brown on one side; flip, adding more olive oil if necessary; cook until second side is golden brown, about 4 to 5 minutes; remove from heat; serve immediately.
