Smoked Salmon Sandwich with Dill/Chive Mascarpone Makes 1 Sandwich Ingredients: ¼ cup mascarpone cheese 1 Tbsp. fresh dill, chopped 1 Tbsp. chives, chopped kosher salt black pepper, freshly ground 2 slices whole wheat bread, toasted 4 oz. smoked salmon fillets, thinly-sliced 1 ½-” slices vine-ripened tomato 4 thin slices of red onion 1 tsp. capers Procedure: 1. Mix mascarpone, dill, and chives together in small bowl; season; reserve. 2. Place toasted bread slices out on work surface; smear ⅛ mascarpone mix on each slice of bread; layer one slice with smoked salmon, tomato, red onion, capers; close sandwich; serve immediately.
